Here is our selection of recommended hotels in Cappadocia. It certainly has no pretence to be a complete list of all the hotels in Cappadocia, and although we have visited all of them and know them well, we haven't stayed in all of the hotels listed.
However, what we can say that these are hotels which we recommend to our friends and family when they come to visit us.

When you push open the grand wooden doors of Aya Kapadokya, a whole new world opens up to you! You step back in time to an era when Ürgüp was known by its Greek name of Prokopi and this magnificent hotel was a Greek mansion housing subterranean wineries, kitchens, stables, cave dwellings and a chapel. All of these spaces have been lovingly and patiently restored to their original state; each of the hotel rooms has its own history and the owners gone out of their way to provide luxurious comfort and sumptuous en suite bathrooms while respecting the character of each of the 12 superb rooms. Even the tables are made from old wooden doors which were rescued from the rubble during the restoration of this elegant mansion.
Emre and Begüm, the owners, are wonderfully friendly, helpful and passionate about their project, which they want to transform into a cultural space open for art residence and research; the library will soon house over 2000 books, some dating back to 16th century. You immediately feel at ease here in this oasis of soothing comfort and generous hospitality. Every detail has been thought through to make you feel welcome and add to the harmonious ambiance.

Canyon Cave Hotel is located in the historic area of Esbelli, part of the village of Ürgüp in the very centre of Cappadocia. The hotel stands on a hill overlooking the old township, surrounded by other boutique hotels and quality restaurants. From the rooftop terraces and upper courtyard you can enjoy panoramic views over Ürgüp and the rocky outcrops illuminated with the magnificent colours of the sunsets. Cave Konak is situated in an old street right in the centre of Ürgüp: cafes, restaurants and all other facilities you need are just outside the door. History is present in every nook and cranny of this charming hotel. Chelebi Cave House is located in the heart of Cappadocia in the small town of Göreme. The hotel is situated in an old Greek house, on one of the small winding streets that lead up out of the centre of town. Gamirasu Hotel is located near Ürgüp, in the quaint village of Ayvalı. A small, welcoming family-run cave hotel, set in the heart of Cappadocia in the village of Mustafapaşa, only 5 minutes from Urgup. Selçuklu Evi is a beautiful boutique hotel and a fine example of Seljuk architecture. Situated in a small lane surrounded by local homes and gardens this area has panoramic views of rock hewn caves and the old village of Ürgüp. This antique house has been lovingly restored by hand. The local craftsmen of Ürgüp spent 2 years to complete the restoration. Each block was quarried from the local area and then manually sculptured and levelled before becoming part of Selçuklu Evi. As much as possible of the original house has been conserved. Each motif and impression on the stones has a story to tell, which is why this restoration is so unique.
